Classic Granola
Master the art of the perfect, shatteringly crisp, heavily clumped homemade granola. By aggressively pressing the wet oat mixture into the pan before baking and leaving it completely undisturbed while it cools, you create giant, golden clusters that put any store-bought box to absolute shame.
Ingredients
The Hearty Foundation: 3 cups old-fashioned rolled oats (do not use quick oats).
The Crunchy Mix: 1 ½ cups mixed raw nuts and seeds (such as chopped pecans, sliced almonds, and pumpkin seeds).
The Wet Emulsion: ½ cup melted coconut oil (or melted unsalted butter), ½ cup pure maple syrup or honey, and 1 tsp pure vanilla extract.
The Spiced Depth: 1 tsp ground cinnamon and ¾ tsp fine sea salt (crucial to balance the sweetness).
The Chewy Finish (Added later): ¾ cup dried cranberries, cherries, or raisins.
Instructions
The Oven Prep: Preheat your oven to 160°C (325°F). Line a large, heavy-duty rimmed baking sheet entirely with parchment paper.
The Dry Toss: In a very large mixing bowl, toss the rolled oats, mixed raw nuts, seeds, cinnamon, and fine sea salt until the spices are evenly distributed.
The Wet Integration: Pour the melted coconut oil, maple syrup, and vanilla extract directly over the dry ingredients. Use a large rubber spatula to aggressively fold the mixture until absolutely every single oat and nut is heavily coated and glistening.
The Crucial Press: Pour the wet granola mixture onto the prepared baking sheet. Spread it out into an even layer, then use the flat back of your spatula (or the bottom of a measuring cup) to press the granola down firmly into a dense, compact slab. This pressure is the absolute secret to achieving giant, bakery-style clusters.
The Golden Bake: Bake on the center rack for 22 to 26 minutes until deeply golden and fragrant. Rotate the pan halfway through, but do not stir the granola under any circumstances.
The Patient Cool: Remove the pan from the oven. The granola will still feel completely soft and wet—this is perfectly normal. Let the pan sit at room temperature completely undisturbed for at least 45 minutes to an hour. As the sugars cool, the granola will harden into one giant, shatteringly crisp sheet.
The Break and Mix: Once entirely cool, use your hands to break the giant slab into your desired size of clusters. Toss in the dried fruit (never bake the fruit, or it will turn into rock-hard pebbles) and store in an airtight glass jar for up to 3 weeks.
