Cheesy BBQ Chicken Recipe
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
Salt and freshly cracked black pepper
1 to 1 ½ cups of your favorite BBQ sauce (use a sugar-free brand if you want to keep it low-carb/keto)
1 ½ cups shredded Monterey Jack or mozzarella cheese
½ small red onion, very thinly sliced
¼ cup sliced jalapeños (fresh or pickled, depending on your heat preference)
Fresh cilantro or parsley, chopped (for garnish)
Instructions
Preheat and Prep: Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
Season the Chicken: Pat the chicken breasts dry with paper towels. Rub them down with the olive oil, garlic powder, smoked paprika, salt, and pepper. Place the seasoned chicken in a single layer in the prepared baking dish.
Add the Sauce: Pour the BBQ sauce evenly over the chicken breasts, making sure each piece is well-coated.
First Bake: Bake uncovered for 20 to 25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Top it Off: Remove the baking dish from the oven. Sprinkle the shredded cheese generously over each chicken breast. Scatter the thinly sliced red onions and jalapeño slices evenly over the melted cheese.
Melt and Broil: Return the dish to the oven and bake for another 3 to 5 minutes until the cheese is completely melted and bubbly. For slightly charred edges on the onions and jalapeños (like in the photo), flip your oven to broil for the last 1 to 2 minutes—just watch it closely so it doesn't burn!
Garnish and Serve: Remove from the oven and let it rest for a couple of minutes. Sprinkle with fresh chopped cilantro or parsley right before serving. Serve hot with an extra drizzle of BBQ sauce from the pan!
