Chicken Cobbler Dinner Casserole recipes
Ingredients
4 cups cooked chicken, shredded or cubed (a rotisserie chicken is a great shortcut)
1 block (8 oz) cream cheese, softened
½ cup sour cream (or plain Greek yogurt)
1 packet (1 oz) dry Ranch seasoning mix
½ cup to 1 cup chicken broth (to reach your desired creaminess)
8 slices bacon, cooked until crispy and crumbled
2 cups shredded mozzarella cheese (for that perfect cheese pull)
1 cup shredded sharp cheddar cheese
1 bunch green onions (scallions), chopped
½ tsp black pepper
Instructions
Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Make the Sauce: In a large mixing bowl, whisk together the softened cream cheese, sour cream, dry Ranch seasoning, black pepper, and chicken broth until smooth and creamy.
Mix the Filling: Fold the cooked chicken into the cream cheese mixture. Stir in half of the crumbled bacon, half of the chopped green onions, and 1 cup of the shredded mozzarella cheese.
Assemble: Spread the creamy chicken mixture evenly into your prepared baking dish.
Add Toppings: Sprinkle the remaining 1 cup of mozzarella and 1 cup of cheddar cheese evenly over the top. Scatter the remaining crispy bacon bits over the cheese layer.
Bake: Bake uncovered for 15 to 20 minutes, or until the edges are hot and bubbling and the cheese is fully melted and gooey.
Garnish: Remove from the oven and immediately sprinkle the remaining fresh green onions over the top. Serve hot!
