Ingredients
1 stick (½ cup) unsalted butter
2 to 3 cups cooked chicken, shredded (a rotisserie chicken is perfect for this)
1 bag (12-16 oz) frozen mixed vegetables (peas, carrots, corn, green beans)
2 cups biscuit baking mix (like Bisquick, or a box of Red Lobster Cheddar Bay Biscuit Mix for extra flavor)
2 cups whole milk
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 tsp garlic powder
½ tsp onion powder
Salt and freshly cracked black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat and Prep: Preheat your oven to 350°F (175°C). Place the stick of butter into a 9x13-inch baking dish and put it in the oven while it preheats just until the butter is completely melted. Carefully remove the hot dish from the oven.
Layer the Chicken and Veggies: Spread the shredded cooked chicken in an even layer directly over the melted butter. Sprinkle the chicken with garlic powder, onion powder, salt, and pepper. Next, scatter the frozen mixed vegetables evenly over the chicken layer. Do not stir.
Mix and Pour the Batter: In a medium mixing bowl, whisk together the biscuit baking mix and the milk until just combined (if using the Cheddar Bay mix, stir the included seasoning packet into the batter here). Slowly pour this batter evenly over the chicken and vegetables. Do not stir.
Mix and Pour the Gravy: In a separate bowl, whisk together the chicken broth and the cream of chicken soup until smooth. Slowly pour this mixture evenly over the biscuit batter layer. Do not stir. (It will look very watery and messy, but trust the process!)
Bake: Bake uncovered for 45 to 60 minutes. As it cooks, the biscuit batter will rise to the top and turn a beautiful golden brown, while the bottom layers form a rich, creamy gravy.
Rest and Serve: Remove the casserole from the oven and let it rest for 10 to 15 minutes before serving. This resting time is crucial—it allows the gravy inside to thicken up. Garnish with fresh chopped parsley and serve warm!
