Ingredients
1 lb ground beef
1 small can (4 oz) diced green chilies
2 tbsp keto-friendly taco seasoning (or a mix of chili powder, cumin, garlic powder, and salt)
8 low-carb keto-friendly tortillas
1 can (10 oz) red enchilada sauce (look for a brand with no added sugar)
2 cups shredded Mexican blend or Cheddar Jack cheese
Optional: 1/4 cup diced onions (to cook with the beef)
Instructions
Prep: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch glass baking dish with non-stick spray.
Cook the Filling: In a large skillet over medium-high heat, brown the ground beef (and diced onions, if using) until fully cooked. Drain any excess grease.
Season: Stir the diced green chilies and taco seasoning into the ground beef. Let it simmer for 2-3 minutes so the flavors meld together, then remove from heat.
Prep the Dish: Pour a thin layer of enchilada sauce into the bottom of your prepared baking dish to prevent sticking.
Assemble: Lay out a low-carb tortilla. Add a generous scoop of the beef mixture down the center and sprinkle lightly with a pinch of cheese. Roll the tortilla up tightly and place it seam-side down in the baking dish. Repeat this process for the remaining tortillas.
Top: Pour the remaining red enchilada sauce evenly over the top of the rolled enchiladas.
Add Cheese: Sprinkle the rest of the shredded cheese evenly over the sauce, covering the enchiladas completely.
Bake: Bake uncovered for 15-20 minutes, or until the enchilada sauce is bubbling around the edges and the cheese is fully melted and slightly golden.
Serve: Let it cool for 5 minutes before serving. Garnish with sour cream, sliced avocado, or fresh cilantro if desired!
