Keto Cheeseburger Casserole

 Keto Cheeseburger Casserole

Ingredients

  • 2 lbs ground beef (80/20 works great for keto)

  • ½ medium yellow onion, chopped

  • 2 cloves garlic, minced

  • 4 oz cream cheese, softened

  • 3 tbsp sugar-free ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 cups shredded cheddar cheese (or a cheddar-jack blend)

  • Fresh or dried chopped parsley (for garnish)

  • Optional burger toppings for serving: Shredded lettuce, diced tomatoes, or chopped dill pickles

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.

  2. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef and chopped onions together until the beef is fully browned and the onions are soft. Drain any excess grease from the pan.

  3. Add the Aromatics: Stir the minced garlic into the beef and cook for 1 more minute until fragrant.

  4. Create the Burger Sauce Base: Reduce the heat to low. Add the softened cream cheese, sugar-free ketchup, mustard, Worcestershire sauce, salt, and black pepper to the skillet. Stir continuously until the cream cheese is completely melted and the beef is coated in a rich, creamy sauce.

  5. Assemble the Casserole: Transfer the beef mixture to your prepared baking dish, spreading it out into an even layer.

  6. Top with Cheese: Sprinkle the shredded cheddar cheese generously and evenly over the top of the beef.

  7. Bake: Bake uncovered for 15-20 minutes, or until the cheese is completely melted, bubbly, and slightly golden around the edges.

  8. Garnish and Serve: Remove from the oven and sprinkle with chopped parsley. Let it sit for about 5 minutes before serving. Serve hot, and top individual plates with your favorite low-carb burger toppings if desired!
