Creamy Garlic Parmesan Pasta 



Master the art of the perfect, velvety cream sauce. By gently blooming a massive amount of fresh garlic in butter before building a heavy cream and Parmesan emulsion, you create a remarkably rich, intensely aromatic dish that aggressively clings to every single noodle.

Ingredients

  • The Delicate Base: 1 pound dry fettuccine, linguine, or penne pasta.

  • The Aromatic Foundation: ¼ cup (½ stick) unsalted butter and 6 massive cloves of garlic (finely minced).

  • The Velvety Bath: 1 ½ cups heavy whipping cream.

  • The Sharp Melt: 1 ½ cups freshly grated Parmigiano-Reggiano cheese (strictly grate from the block).

  • The Seasoning: ½ tsp fine sea salt and 1 tsp freshly cracked black pepper.

  • The Fresh Finish: ¼ cup finely chopped fresh parsley.

Instructions 



  1. The Pasta Boil: Drop the pasta into a large pot of boiling, heavily salted water. Cook until strictly al dente. Reserve ½ cup of the starchy pasta water, then drain.

  2. The Garlic Bloom: While the pasta boils, melt the butter in a large, deep skillet over medium-low heat. Add the minced garlic. Sauté for exactly 60 to 90 seconds until the garlic is incredibly fragrant but has absolutely no brown color (browned garlic turns bitter).

  3. The Cream Emulsion: Pour the heavy cream directly into the garlic butter. Increase the heat to medium and bring to a gentle simmer. Let it bubble for 3 to 4 minutes until the liquid reduces slightly and heavily coats the back of a spoon.

  4. The Cheese Integration: Turn the heat to the absolute lowest setting. Vigorously whisk the freshly grated Parmesan into the cream in small handfuls until completely melted and flawlessly smooth.

  5. The Vigorous Toss: Dump the hot, drained pasta directly into the skillet. Use tongs to aggressively toss the pasta until heavily coated by the glossy sauce. If it appears too thick, splash in a bit of the reserved pasta water. Garnish heavily with fresh parsley and serve immediately.
