Creamy Sausage Rigatoni Recipe

Creamy Sausage Rigatoni Recipe

Capture the intense, hearty essence of an Italian trattoria. By searing ground sausage until deeply caramelized and building a vibrant "pink sauce" with marinara and heavy cream, you create a heavy-hitting, fiercely savory dish that coats thick pasta perfectly.

Ingredients

  • The Sturdy Base: 1 pound dry rigatoni (the large tubes trap the meat and sauce flawlessly).

  • The Savory Protein: 1 pound ground mild or spicy Italian sausage.

  • The Aromatic Foundation: 1 yellow onion (finely diced) and 4 cloves garlic (minced).

  • The Rich Pink Sauce: 1 large jar (24 oz) premium marinara sauce and ½ cup heavy whipping cream.

  • The Sharp Melt: ½ cup freshly grated Parmesan cheese.

  • The Fresh Finish: ½ cup fresh spinach (optional, roughly chopped) and fresh basil.

Instructions

  1. The Pasta Boil: Drop the rigatoni into heavily salted boiling water. Cook until strictly al dente. Drain well.

  2. The Aggressive Sear: Heat a large Dutch oven or deep skillet over medium-high heat. Add the ground Italian sausage and diced onion. Cook for 6 to 8 minutes, breaking the meat apart continuously until it is deeply browned and slightly crispy. Drain any excess grease.

  3. The Garlic Bloom: Reduce the heat to medium-low. Add the minced garlic to the sausage, stirring for 60 seconds until intensely fragrant.

  4. The Sauce Emulsion: Pour the entire jar of marinara sauce directly over the meat. Stir well, then slowly pour in the heavy cream. The sauce will transform into a vibrant, velvety pink color. Simmer gently for 5 minutes.

  5. The Final Integration: Turn the heat to low. Stir the fresh spinach (if using) and grated Parmesan directly into the bubbling sauce until the greens wilt. Dump the hot rigatoni into the pot. Toss vigorously until the heavy sauce coats every single noodle and fills the tubes. Serve immediately with extra Parmesan.
