Capture the incredibly rich, slow-simmered depth of a traditional Russian classic in a fraction of the time. By heavily searing thin slices of beef and building a deep, earthy mushroom gravy finished with tangy sour cream, you create a fiercely savory sauce destined for wide egg noodles.

Ingredients

  • The Sturdy Base: 1 pound dry wide egg noodles.

  • The Meat Canvas: 1 ½ pounds sirloin steak or flank steak (sliced against the grain into thin strips).

  • The Earthy Core: 8 oz cremini or button mushrooms (sliced) and 1 yellow onion (finely diced).

  • The Rich Gravy: 3 tbsp all-purpose flour, 2 cups beef broth, and 1 tbsp Dijon mustard.

  • The Velvety Finish: ¾ cup full-fat sour cream (warmed slightly).

  • The Searing Fat: 2 tbsp olive oil and 2 tbsp unsalted butter.

Instructions

  1. The Aggressive Sear: Heat the olive oil in a large skillet over medium-high heat. Season the steak strips heavily with salt and pepper. Sear in batches for just 1 to 2 minutes per side until a dark brown crust forms (do not cook completely through). Remove the meat to a plate.

  2. The Mushroom Sweat: Reduce heat to medium. Melt the butter in the same skillet. Add the diced onion and sliced mushrooms. Sauté for 6 to 8 minutes until the mushrooms release their water and deeply brown.

  3. The Roux Build: Sprinkle the flour entirely over the mushrooms and onions. Stir constantly for 60 seconds to cook out the raw flour taste.

  4. The Gravy Simmer: Slowly pour in the beef broth, scraping up all the deeply savory browned bits from the bottom of the pan. Stir in the Dijon mustard. Simmer for 5 minutes until the gravy thickens beautifully.
