Easy Salsa Chicken Recipe

Execute the absolute easiest, most brilliantly lazy shortcut dinner on the planet. By relying on only three ingredients and utilizing the oven to gently poach the chicken directly in vibrant salsa, you create impossibly tender, flavorful meat that is perfect for shredding into tacos or serving over rice.

Ingredients

  • The Lean Protein: 4 boneless, skinless chicken breasts.

  • The Vibrant Bath: 1 large jar (16 oz) premium, chunky salsa (mild, medium, or hot, depending on your preference).

  • The Melty Crown: 1 ½ cups freshly shredded Mexican-blend or Monterey Jack cheese.

  • The Optional Seasoning: 1 tsp taco seasoning or cumin (for an extra kick).

Instructions

  1. The Oven Prep: Preheat your oven to 190°C (375°F). Lightly grease a 9x13-inch baking dish.

  2. The Strategic Load: Lay the raw chicken breasts flat in the baking dish in a single, even layer. If you are using the optional taco seasoning, sprinkle it heavily over the meat now.

  3. The Salsa Blanket: Pour the entire jar of chunky salsa directly over the chicken breasts, ensuring every single piece of meat is entirely submerged and covered by the salsa. (This barrier prevents the chicken from drying out in the oven).

  4. The Gentle Bake: Bake uncovered for 35 to 40 minutes until the chicken is completely cooked through (reaching an internal temperature of 165°F / 74°C) and the salsa is fiercely bubbling.

  5. The Cheesy Cap: Remove the dish from the oven. Scatter the shredded cheese heavily and completely over the chicken. Return to the oven for an additional 3 to 5 minutes until the cheese is spectacularly melted and speckled with golden spots. Serve the tender chicken breasts whole, or use two forks to aggressively shred the meat directly into the saucy pan juices.
