Achieve the robust, deeply savory satisfaction of taco night inside a vibrant, naturally sweet, low-carb vessel. By roasting bell pepper halves until tender and stuffing them to the brim with seasoned beef and molten cheese, you create an elegant yet completely effortless dinner.

Ingredients 



  • The Vibrant Vessel: 3 large bell peppers (any color, cut in half vertically, seeds and membranes removed).

  • The Savory Core: 1 pound lean ground beef (80/20 ratio).

  • The Spice Emulsion: 1 packet (1 oz) premium taco seasoning.

  • The Flavor Enhancer: ½ cup chunky salsa and ½ cup cooked white rice (optional, for texture).

  • The Melty Crown: 1 ½ cups freshly shredded cheddar-jack cheese.

Instructions

  1. The Pepper Prep: Preheat your oven to 190°C (375°F). Place the hollowed-out bell pepper halves cut-side up in a 9x13-inch baking dish. Pour ¼ cup of water into the bottom of the dish to create steam.

  2. The Meat Sear: Heat a large skillet over medium-high heat. Brown the ground beef completely. Drain the fat, then stir in the taco seasoning, required water, salsa, and cooked rice. Simmer for 3 minutes until thick and heavily glazed.
