Velveeta Shells (Homemade Liquid Gold)

Velveeta Shells (Homemade Liquid Gold)

Conquer the nostalgic magic of the legendary boxed pasta with a completely from-scratch, fiercely savory technique. By utilizing a simple milk reduction and melting an entire block of processed cheese directly into the pot, you guarantee an impossibly smooth, molten sauce that vigorously clings to every shell.

Ingredients

  • The Sturdy Canvas: 1 pound dry medium pasta shells.

  • The Liquid Gold: 1 block (16 oz) Velveeta cheese (cut into 1-inch cubes for rapid melting).

  • The Rich Binder: ½ cup whole milk and ¼ cup (½ stick) unsalted butter.

  • The Flavor Enhancer: ½ tsp dry mustard powder and ¼ tsp garlic powder (the absolute secret to elevating the cheese flavor).

Instructions

  1. The Shell Boil: Drop the pasta shells into a large pot of heavily salted, boiling water. Cook until tender. Crucial step: Drain the pasta very well, but do not rinse it. Return the hot, empty pot to the stove over low heat.

  2. The Dairy Base: Add the whole milk and butter to the warm pot. Whisk in the dry mustard powder and garlic powder. Let the butter melt entirely.

  3. The Molten Melt: Drop the cubed Velveeta entirely into the warm milk mixture. Use a wooden spoon or silicone spatula to stir continuously. The cheese will slowly collapse and melt into a brilliantly glossy, thick, liquid gold sauce.

  4. The Strategic Fold: Once the sauce is flawlessly smooth with zero lumps, dump the hot pasta shells directly back into the pot.

  5. The Rest: Fold the shells aggressively into the cheese. Crucial technique: Remove from heat and let the pot sit uncovered for exactly 3 minutes before serving. As it slightly cools, the sauce will thicken and lock itself directly into the hollow centers of the shells.
