Dorito Chicken Casserole is a wildly popular weeknight dinner that combines tender shredded chicken and a creamy, taco-spiced filling with the unmistakable, savory crunch of Nacho Cheese Doritos. It is the ultimate family-pleasing comfort food—inexpensive, quick to throw together using mostly pantry staples, and practically guaranteed to have everyone asking for seconds.
Ingredients
The Creamy Chicken Filling:
3 cups cooked chicken, shredded or diced (a store-bought rotisserie chicken is perfect here)
1 (10.5 oz) can condensed cream of chicken soup
1 cup sour cream (or plain whole-milk Greek yogurt)
½ cup salsa (choose your preferred heat level)
1 packet (1 oz) taco seasoning
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can whole kernel corn, drained
The Cheese & Crunch:
2 cups Mexican-blend cheese or sharp cheddar, freshly grated (divided)
1 large bag (approx. 9–11 oz) Nacho Cheese Doritos, lightly crushed
Instructions
1.Prep the Oven and Pan:Greasing the pan prevents the cheese and creamy sauce from sticking to the edges..Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with nonstick cooking spray.
2.Crush and Layer the Doritos:Leave some larger chunks so they don't turn to mush..Gently crush the Doritos while they are still in the bag. Spread exactly half of the crushed Doritos evenly across the bottom of your prepared baking dish. Set the remaining half aside for the topping.
3.Mix the Filling:Mix thoroughly so the taco spices are evenly distributed..In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, salsa, and taco seasoning. Whisk until smooth. Fold in the shredded chicken, drained black beans, drained corn, and 1 cup of the grated cheese.
4.Assemble the Casserole:Spread gently so you don't disturb the bottom layer of chips..Spoon the creamy chicken mixture evenly over the bottom layer of crushed Doritos in the baking dish.
5.Top with Cheese and Crunch:Sprinkle the remaining 1 cup of grated cheese evenly over the chicken layer. Finally, top the casserole with the remaining crushed Doritos.
6.Bake and Serve:Bake until the edges are hot and bubbling..Bake uncovered in the preheated oven for 20 to 25 minutes. The casserole is done when the cheese is completely melted and the creamy sauce is bubbling around the edges. Let it rest for 5 minutes before serving so it holds its shape when scooped.
