Easy Make-Ahead Fresh Peach Overnight Oats Meal Prep
Mornings are chaotic, but this easy make-ahead fresh peach overnight oats meal prep guarantees you have a fiber-rich, delicious breakfast waiting for you. The oats and chia seeds soften in the fridge as you sleep, creating a texture similar to a thick, creamy pudding.
Ingredients:
½ cup old-fashioned rolled oats (do not use instant oats, they turn to mush)
½ cup milk (whole milk, almond milk, or oat milk)
¼ cup plain or vanilla Greek yogurt
1 tbsp chia seeds (crucial for thickening)
1 tbsp pure maple syrup or honey
½ tsp ground cinnamon
½ cup fresh peaches, diced
In a mason jar or a meal-prep container with a tight-fitting lid, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, and cinnamon. Use a spoon to stir everything together vigorously for at least 30 seconds to ensure the chia seeds are evenly suspended in the liquid.
Gently fold the diced fresh peaches into the oat mixture. If you want an aesthetic look, you can layer the peaches at the bottom or top, but mixing them in allows their juices to flavor the oats.
Secure the lid tightly on your jar or container. Place it in the refrigerator and let it rest for at least 4 hours, but ideally overnight (8 to 12 hours).
The next morning, remove the lid and give the oats a good stir. They should be thick, creamy, and soft. If you prefer a thinner consistency, stir in an extra splash of milk. Eat chilled straight from the jar!
