Healthy Summer Fresh Peach and Goat Cheese Salad Recipe
When it is too hot to turn on the oven, this healthy summer fresh peach and goat cheese salad recipe is the perfect vibrant, nutrient-dense lunch or side dish. The sweetness of the peaches perfectly balances the peppery greens and tangy cheese.
Ingredients:
4 cups mixed greens (a 50/50 blend of baby spinach and arugula works best)
2 large fresh peaches, pitted and thinly sliced
⅓ cup pecans or walnuts
¼ cup goat cheese or feta cheese, crumbled
¼ cup red onion, sliced paper-thin
3 tbsp balsamic vinaigrette (store-bought or homemade)
